Who doesn't like Jam Doughnuts?

Jam Doughnut Cupcakes - makes 24 cupcakes
285g flour
115g sugar
1 egg
4 tsp baking powder
300ml milk
75ml vegetable oil
1/2 tsp nutmeg
1/2 tsp cinnamon


Raspberry or strawberry jam
Vanilla Frosting
Cinnamon and sugar for dusting


Preheat oven to 170c.

Place the baking powder, flour, nutmeg and cinnamon in a bowl and mix together.

Place the egg in a large bowl and whisk. Add in the sugar, milk and oil and beat together. 

Add the flour mixture and mix in well.

Spoon mixture into tin. About 3/4 full but no more.

Bake for 18 minutes. The recipe said 25 mins at 180c but I didn't trust it and thankfully I didn't. They would have burnt.

Once cool, spoon out a tsp of cake and replace with a tsp of jam.

Ice with vanilla frosting. Mix together some sugar and cinnamon and sprinkle of top of cake.
DELICIOUS!!!!

  2. ps what were the cupcakes actually like? The recipe has a lot of milk so just wondered about the texture!

  3. It was a good cake which surprised me as I tried another recipe from this book and it sucked. It was nice and moist. The only thing was that the jam bled a little bit the next day but it didn't affect the taste or texture.
